Garden fresh cukes are delicious cut into snack sticks and sprinkled with a little sea salt or dipped in a homemade dip. The humble cucumber is known for being the star of a salad and getting pickled and put in sandwiches. We love them in everything, especially these snack and appetizer recipes! Stuffed Cucumber Cups And Bites
Easy cucumber bites are so pretty on trays and simple to make. Try spooning the filling into a piping bag and pipe rosettes or neat circles on each slice of hollowed out cucumber. Persian cucumbers and long English cucumbers are the best type of cucumber for these with their thin skin.
Go classic with cream cheese filling or try out the cucumber taco bites for a Mexican snack. Try a tuna stuffed version with sushi flavors or spicy buffalo seasoned. Hi Carole, I think ranch dip goes amazing with cucumbers as does roasted eggplant dip (check out my mutabal recipe https://sabrinacurrie.com/mutabal/). Roasted red pepper dip and creamy crab dip are other great dips for cucumber. Hope that helps, thanks for dropping me a note 🙂 Sabrina
