Bacon and Bell Pepper Quiche is the perfect recipe for breakfast or dinner. Packed with cheese, bacon and bell peppers, it is full of delicious flavor.

One of my favorite things to make is quiche. I love how versatile it can beand I modeled this quiche after an absolutely delicious omelet that I have to go get every time I visit my parents. In the little town they live in, there is a small breakfast place with about 8 tables inside and probably another 12 outside. They have an omelet that is packed full of bell peppers, bacon, potatoes and cheese. Omelets are not my forte, so I decided to take the aspects of this dish I love and make it into a quiche. To keep it easy (and a little healthier) I cut out the potatoes for this dish.

Breakfast for dinner is a staple in our house. One reason I love it is because in the morning, I don’t really feel like taking time to prepare something like this Bacon and Bell Pepper Quiche. I’m usually making some scrambled eggs and a biscuit really quick and then moving along with my day. But when I make breakfast for dinnerm I like to make something a little more exciting. The other night we enjoyed this Bacon and Bell Pepper Quiche with my Three Cheese Grits Casserole and it was the perfect combination for breakfast for dinner.

This Bacon and Bell Pepper Quiche is made with a pie crust but you could do it without to save some calories. I love the options you have with this dish.

Ingredients:
-1 unbaked pie shell
-1 1/2 cup shredded cheddar cheese
-1 cup bell peppers, chopped
-3/4 cup crumbled bacon
-1 cup half-n-half
-3 eggs
-dash of salt and pepper

Directions:

  1. Preheat the oven to 325 and place the pie shell in a pie pan
  2. Chop up the bell peppers and cook the bacon and crumble it
  3. Place the crumbled bacon, bell peppers and cheese in the bottom of the pie pan
  4. Combine eggs, cream, salt and pepper and beat eggs until smooth
  5. Pour egg mixture into pie dish
  6. Bake at 325 for 45 minutes or until firm

Tyler and I both loved how this quiche turned out. It really reminded me of the omelet that I love so much so I was happy to be able to recreate it. The flavors of the bell peppers in the quiche were delicious. This Bacon and Bell Pepper Quiche will definetley be a staple in our breakfast line up from now on!

Ingredients

  • 1 unbaked pie shell
  • 1 1/2 cups cheddar cheese
  • 1 cup bell peppers chopped
  • 3/4 cup bacon crumbled
  • 1 cup half-n-half
  • 3 eggs
  • 1 tsp salt
  • 1 tsp pepper

Instructions

  1. Preheat the oven to 325 and place the pie shell into a pie pan

  2. Chop up the bell peppers and cook the bacon and crumble it

  3. Place the crumbled bacon, bell peppers and cheese in the bottom of the pie pan

  4. Combine eggs, cream, salt and pepper in a medium bowl and beat until smooth

  5. Pour egg mixture into pie dish

  6. Bake at 325 for 45 minutes or until firm
