Cinnamon Chip Scones and Sunday Morning

There are certain foods you eat because you’re trying to be smart and fuel your body with a healthy diet. There are others you eat because you love them and because they become a tradition in your home. This cinnamon chips scones recipe falls in the latter category and has become a go to treat in our house on special occasions and on those weekend mornings when you just want a little something extra and delicious to start your day. These cinnamon chipscones are amazing and they pair well with a lazy Sunday morning, a good cup of coffee, and the sudoku or crossword puzzle-like activity of your choice. Our kids love them too which is great because it’s not always easy to find kid friendly items that the whole house loves. You might consider having yourkids eat a healthy breakfast with lots of fresh fruit in order to earn their scones. That’s how we do it in our house and when our kids hear that cinnamon scones are in the oven it’s not long before theirbreakfast plates are empty and they’re ready for scones.

There are Good Scones and Bad Scones

Have you ever wandered into a cafe or Starbucks and been enticed by the scones only to instantly regret it after the first bite when it explodes into a dust cloud of crumbs? If so, you are not alone. I also dislike the crusty sugar you often find on theoutside of a lot of scones. What’s that all about? Get that off of there! After being disappointed by several bad scones my search for a good scones recipe began. I figured if I found a few good scone recipes online I could try them out and then, hopefully, tweak the scone recipeI liked best into something really delicious.

Forgive me for not remembering all the recipes I tried out, but eventually I arrived at a winning recipe for delicious cinnamon scones. This biggest hurdle I faced was finding good cinnamon chips for baking because I couldn’t find any at our local small town supermarket and so I had to search around and find some on the internet. How did folks cook with great ingredients before google? 🙂

It’s all about the Cinnamon Chips

Without a doubt the star ingredient that goes into this recipe arethe cinnamon chips — it’s right there in the title after all, Cinnamon Chip Scones! With that in mind I say to you, not all cinnamon chips are created equal. We found this out the hard way when we strayed from our go to brand of cinnamon chips only to be met with serious disappointment when our scones didn’t live up to the level of deliciousness we had come to expect. Since that experience we always try to have cinnamon chips from King Arthur Flour on hand (I think you can make 3-4 batches from 1 package). We often buy our flour there too since they seem to make high quality ingredients. If you find a different kind of cinnamon chip that you prefer, great! But we definitely recommend the King Arthur cinnamon chips if you are struggling to find one you like and we stress the importance of this ingredient. Whenever I make these cinnamon chips scones I’m always surrounded by our kids who are each trying to steal cinnamon chips for an advanced taste test. Hard to blame them!

Scone Morning = Happiness for All

Everyone in our house is happy when it’s a cinnamon scone morning because everyone loves them! But I’m also happy because they are so easy to make and then my husband Greg is always happy to do the kitchen cleanup after being rewarded with scones. When I first made them my son Sam said,“Mommy, I’m taking big bites because these cinnamon scones are so yummy!” and then continued with “Mommy, now I’m licking the plate.” Hard to beat the lick the plate endorsem*nt.

Enough of the tantalizing details, on to the recipe:

FAQs

What is the secret to a good scone? ›

Always keep your ingredients and bowl as cold as possible, this ensures a light result. Work quickly and use your hands as little as possible as the heat from your hands can quickly warm the ingredients and make the end result “heavy”. Arrange the scones close together, this will ensure a good rise and even baking.

What is the secret to making scones rise? ›

How to make scones rise high? Once you've cut out your scone shapes, flip them over and place upside down on the baking tray. This will help them rise evenly and counteract any 'squashing' that happened when you cut out the dough. Perfect scones should rise to about 2 inches high.

Why do scones need so much baking powder? ›

Q: Why do scones call for so much baking powder? A: Baking powder is a very important raising agent for this recipe since it leavens the whole recipe mixture instead of just flour. Therefore, with all other heavy ingredients involved, it's necessary to use a lot of baking powder to give the scones a decent rise.

Why didn't my scones rise much? ›

Placing a dough in a cool oven that then slowly heats up actually affects the rising agent. Make sure your oven is at the right temperature you will be baking the scones at before you put them in. Also having an oven that is too hot or too cold will affect the baking of your scones immensely.

Which flour is best for scones? ›

Use all-purpose flour for a higher rising scone that holds its shape nicely, both in and out of the oven. To make more delicate, lower-rising, cake-like scones, substitute cake flour for all-purpose flour.

Is buttermilk or cream better for scones? ›

Heavy Cream or Buttermilk: For the best tasting pastries, stick with a thick liquid such as heavy cream or buttermilk. I usually use heavy cream, but if you want a slightly tangy flavor, use buttermilk.

Should you chill scone dough before baking? ›

Not chilling the dough before baking: to really ace your scones, it helps to chill your dough again before it's baked. Using cold ingredients does help, but your hands will warm up the dough when you're working with it and the extra step of chilling will help you get the best result.

How long should you rest scones before baking? ›

Recipes for scones sometimes provide a make-ahead option that involves refrigerating the dough overnight so it can simply be shaped and then popped into the oven the next day. But now we've found that resting the dough overnight has another benefit: It makes for more symmetrical and attractive pastries.

Why do my scones go flat and not rise? ›

Why Are My Scones Flat? Expired leavening agents. Your baking powder and/or baking soda could be expired. Most scone and biscuit recipes call for quite a large amount of leavening, and if either are expired, your scones simply won't rise to beautiful heights.

Can you put too much baking powder in scones? ›

Too much baking powder can cause the batter to be bitter tasting. It can also cause the batter to rise rapidly and then collapse. (i.e. The air bubbles in the batter grow too large and break causing the batter to fall.) Cakes will have a coarse, fragile crumb with a fallen center.

Is it better to sift flour for scones? ›

Don't forget to sift!

Be sure to double or even triple sift your flour, as it takes away the clumps in the flour allowing for more air pockets in the scone dough - the result being a fluffier and more crumbly scone.

The mixture may have been too wet or the baking tray might have been too heavily greased. Twisting the cutter when cutting the scones can also have this effect.

Why aren t my scones light and fluffy? ›

Some common reasons for dense scones are not using enough baking powder, overworking the dough and not baking with the oven at the correct temperature.
